Serves 4-6
2 lb. chicken breasts
2-3 peppers, cut in thin strips
1 onion, cut in thin strips
flour tortillas
For the marinade:
2 limes, juiced
¼ tsp. cayenne pepper
3 cloves garlic
¼ tsp. salt
½ c. olive oil
1. Combine ingredients for the marinade and marinate for at least an hour.
2. Grill the chicken and then cut in thin slices OR cut in thin slices and sauté.
3. Sauté the onions and peppers for a few minutes.
4. Combine chicken and vegetables and serve with tortillas.
